WILD RICE AND BREAD STUFFING

1 package of wild rice (cooked per pkg. directions)
1 onion (diced)
2-3 stalks celery (diced)
1-2 Tbsp. olive oil
2 Tbsp. butter
2 tsp. poultry seasoning
2 cups bread cubes
½ cup chopped pecans
½ cup dried cranberries
1 cup low sodium chicken broth
Salt & Pepper to taste

Preheat oven to 400 degrees. Cook the rice per package directions. Once cooked, fluff with a fork. In a preheated skillet, add olive oil & butter, onions, and celery and saute’ until lightly browned. Once onions and celery are cooked add them to the wild rice along with the poultry seasoning, bread cubes, pecan, dried cranberries and chicken broth. Mix well and pour into a pre-oiled baking dish. Add more chicken broth over the top of stuffing if needed. Bake for 20-25 minutes.
