RED CABBAGE AND APPLE SLAW

¼ C LIME JUICE
2 TBSP. LEMON JUICE
1 TSP SUGAR
½ TSP SALT
¾ C EXTRA VIRGIN OLIVE OIL
PEPPER TO TASTE
½ C FRESH MINT LEAVES OR PARSLEY
1 SMALL HEAD RED CABBAGE, SHREDDED
3 GRANNY SMITH APPLES, SLICED THIN

PLACE ALL INGREDIENTS EXCEPT CABBAGE AND APPLES IN A BLENDER. PROCESS TILL SMOOTH AND CREAMY. COMBINE CABBAGE AND APPLES IN A BOWL AND STIR IN DRESSING. SERVE CHILLED.
