BROCCOLI & CAULIFLOWER GRATIN

1 – large frozen bag of broccoli-cauliflower mix
2 Tbsp. butter
½ cup Colby-jack cheese
1 sleeve of buttery crackers (crushed fine)
¼ cup of Parmesean-Reggiano cheese (freshly grated)
¼ cup of Romano cheese (freshly grated)
Salt & Pepper to taste

Preheat oven to 375 degrees. Start by steaming broccoli & cauliflower for approximately 5 minutes. Drain and spread into a casserole dish. Dot with butter. Salt & pepper to taste. Sprinkle with the Colby-Jack cheese. Sprinkle with the crushed buttery crackers. Add a few more dots of butter over crackers. Sprinkle the freshly grated Romano and Parmesean-Reggiano cheese over top of dish. Bake in oven for 20 minutes until cheese is melted and golden brown.
