BEEF CABBAGE CASSEROLE

1-onion (diced)
1 lb. lean ground beef
1- head of green cabbage (shredded)
4- stalks of celery (diced small)
1 lg. can and 1 sm. can of diced tomatoes
Some type of soft bread (pulsed into bread crumbs)
Fresh ground pepper
2 Tbsp. olive oil

Preheat oven to 375 degrees. Brown the ground beef with the onion and celery. While meat mixture is cooking, shred cabbage. Once the meat is browned, add tomatoes and stir to combine and allow to heat through. Once heated through start layering the meat mixture with the cabbage into a casserole dish. Start with a layer of the meat mixture, top with layer of cabbage. Repeat the layering process. Once all layers are complete, top with the bread crumbs. Drizzle olive oil over top along with some fresh ground pepper. Bake for 45 minutes.
