BAKED ONION COATED CHICKEN

6 boneless, skinless chicken breasts
1 cup Panko bread crumbs
1 tsp. dried crushed rosemary
1 can French fried onions (crushed)
3 eggs (beaten with 2 Tbsp. water)
ΒΌ cup olive oil

Preheat oven to 375 degrees. In a shallow bowl mix the French fried onions with the Panko bread crumbs and rosemary and set aside. Place the egg mixture into another shallow bowl. Coat the chicken breast in the egg mixture then press into the Panko crumb mix (coat both sides). Place chicken in a 9 x 13 pan sprayed with non-stick spray. Press any of the left over Panko mix onto the chicken and drizzle with the olive oil. Bake for approximately 30 minutes or until chicken is completely cooked through.
