Ingredients:
2 – Yellow Onions or 1 bag of frozen pearl onions (thawed)
6 Tbsp. butter (divided)
2 Tbsp. canola oil
¼ tsp. salt
2 bags frozen peas
¾ cup Panko crumbs
1 cup half n half (divided)
¾ cup Parmesan cheese (powdered texture)
Directions:
Preheat skillet and melt 2 Tbsp. butter add canola oil cook onion until just softened. Add frozen peas. Cook to warm through. Place pea and onion mixture into a baking dish and set aside. Melt 2 Tbsp. butter in skillet and add about ½ cup of half n half and bring to simmer. In a small bowl add 2 Tbsp. of cornstarch to ½ cup of half n half whisk together to make a rue then add to butter and half n half in skillet. Bring mixture to a simmer to thicken slightly. Pour mixture over the pea and onion mixture in baking dish. In another small bowl mix the Panko bread crumbs, parmesan cheese and butter, mix well. Sprinkle bread crumb mixture over top of pea and onion mixture and bake in a 350 degree oven for about 30 minutes.
