1 LB. FRESH BABY SPINACH
1 TSP OLIVE OIL
2 CLOVES GARLIC, MINCED
2 TBSP BUTTER, MELTED
1 TSP SALT, PINK HIMALAYAN IF POSSIBLE
1 LEMON, ZESTED AND JUICED
HEAT OIL AND BUTTER IN A LARGE SKILLET. ADD THE SPINACH AND GARLIC AND STIR FRY FOR 2-3 MINUTES OR UNTIL SPINACH IS WILTED. ADD LEMON JUICE, ZEST AND SALT. COMBINE AND SERVE.
