4-Zucchini (sliced)
Zest of one lemon
1 bunch of spring onions
2 Tbsp. olive oil
Salt & Pepper to taste
Preheat skillet over medium high heat. Add olive oil and place zucchini in a single layer in pan. (do not salt yet) sprinkle with pepper. Add lemon zest and onions. Saute’ until golden brown and turn over to brown other side.
