GARLIC HERB PORK TENDERLOIN

1 pkg. of two pork tenderloins (trimmed)
2 Tbsp. salt free garlic mixture

Marinade:
4 Tbsp. olive oil
2-3 lemons zest and juice
1 Tbsp. thyme
Salt & Pepper to taste
4 cloves garlic (minced)

In bowl mix the olive oil, lemon juice, zest, thyme, garlic and salt & pepper. Poke several holes in the pork tenderloins with a fork and place in a plastic bag. Pour marinade mixture over the pork and seal bag. Make sure the pork is covered with the marinade. Allow to marinade at least two hours (better if overnight). When ready, preheat oven to 350 degrees. Remove pork from bag and place on plastic mat and sprinkle with the salt free garlic mixture. Brown in a skillet before baking. Place the marinade in baking pan to allow pork to bake in. Bake for 25-30 minutes. Remove pork from oven and plate and allow to rest. Pour the marinade from pan into a small pot, bring to boil, reduce heat and simmer to reduce slightly. Once meat has rested, slice and serve.
