4 Cornish Hens
4 Tbsp. butter (softened)
1 onion (cut into pieces)
1 lemon (cut into pieces)
Salt & Pepper to taste
Preheat oven to 400 degrees. Place Cornish hens on to baking pan and take your finger up under the skin to loosen from the breast meat. Once skin has been loosened, take 1 Tbsp. of
the butter and place under the skin and massage it until dispersed all over the Cornish hen. Repeat with the other three Cornish hens. Take the pieces of the onion and lemon and place into the cavity of each hen. Sprinkle the tops of the Cornish hens with salt and pepper. Place in oven and bake for 30 minutes. Remove and brush the tops of the Cornish hens with melted butter and return to the oven to bake for an additional 15-20 minutes.
