CHUNKEY CHICKEN NOODLE SOUP

1 tsp. vegetable oil
1 medium onion (chopped)
1 rib celery (chopped)
2 carrots (chopped)
1 lb. boneless skinless chicken breast (cut into bite size pieces)
1 tsp. thyme
1 tsp. garlic
Salt & Pepper
2 boxes chicken broth or stock
1 ½ cups egg noodles
½ cup parsley
3-4 scallions

In a preheated stock pot add vegetable oil along with the onions, celery, and carrots. Saute for just a couple of minutes. Add thyme, garlic, salt and pepper. Stir to combine. Add chicken to mixture along with both boxes of broth or stock. Cover and allow to simmer until chicken is cooked through. Once chicken and vegetables are cooked through, add noodles, scallions, and parsley and allow to cook until noodles are done.
