2 CHICKEN BREASTS, COOKED AND SLICED
1 POUND FRESH MOZZARELLA CHEESE, SLICED
2 LARGE TOMATOES, SLICED
1 C FRESH BASIL, TORN OR CHOPPED (NO SUBSTITUTES)
1 MEDIUM TOMATO, CHOPPED
½ C OLIVE OIL
¼ C WHITE WINE VINEGAR
1 TEASPOON MINCED GARLIC
1 TSP SALT
½ TSP PEPPER

IN A BLENDER PUREE CHOPPED TOMATO, OLIVE OIL, VINEGAR, GARLIC, SALT AND PEPPER. SET ASIDE AND CHILL. LAYER THE CHICKEN, CHEESE, TOMATOES NEATLY ON A LARGE SERVING PLATTER. TOP THE SALAD WITH THE DRESSING. SPRINKLE WITH THE FRESH BASIL BEFORE SERVING.
