4-5 LARGE SWEET POTATOES, PEELED AND CUT INTO WEDGES
¾ C PACKED BROWN SUGAR
2 TSP CINNAMON
½ TSP DRIED GINGER
1 TSP SALT
LINE A LARGE BAKING SHEET WITH NONSTICK FOIL. PLACE POTATOES ON PAN AND COAT WITH OIL. MELT BUTTER AND ADD CINNAMON, SALT AND GINGER. POUR ONTO POTATOES AND COAT EVENLY. PLACE POTATOES IN A SINGLE LAYER AND THEN SPREAD BROWN SUGAR OVER WEDGES. ROAST AT 450 FOR ABOUT 30 MINUTES OR UNTIL POTATOES ARE SOFT AND CARAMELIZED.
