BREAKFAST CASSEROLE

½ lb. bacon (diced)
½ green pepper (diced)
1 onion (diced)
1 dozen large eggs
¼ tsp. dill
1 tsp. salt
½ tsp. pepper
1 cup cheddar cheese
1 bag shredded frozen hash browns
1 cup milk

Preheat oven to 375 degrees. Preheat skillet over medium-high heat. Cook bacon until slightly brown. Remove bacon from skillet and add the green pepper and onion to bacon drippings. While the peppers and onions are cooking, mix eggs with cheese, hash-browns, milk, dill, salt and pepper. Mix well. Once onions and green peppers are softened stir them into the egg mixture. Spray a large casserole dish with non-stick cooking spray and spread egg mixture into the dish. Bake for 45 minutes or so. Allow casserole to rest for approximately 10 minutes before cutting.
