Ingredients:
2 bags of frozen corn
2 Tbsp. butter
1 Jar Roasted Red Peppers ( no herbs)
1 can evaporated milk (divided)
1 Tbsp. cornstarch
½ tsp. salt
¼ tsp. ground pepper
1 Tbsp. sugar
¼ cup half n half
Directions:
Preheat skillet and melt 2 Tbsp. butter add corn and heat through. Drain roasted red peppers and dice into small pieces. Add roasted red pepper and ½ can of evaporated milk to corn with ¼ cup half n half and add the salt, pepper and sugar. Whisk 1 Tbsp. cornstarch to the other ½ of evaporated milk and pour into corn mixture and bring to simmer to thicken.
