1 container of baby spinach
¼ – ½ cup of bleu cheese crumbles
¼ – ½ cup chopped walnuts
1 Granny Smith apple (diced)
3-4 slices of bacon (diced)
1 lemon (juiced)
2-3 Tbsp. rice vinegar
Salt and Pepper to taste
½ tsp. sugar
2-3 Tbsp. extra virgin olive oil
In skillet, cook bacon until crisp. While bacon is cooking, combine the spinach, bleu cheese crumbles, walnuts, apple in a large bowl. Once bacon is cooked, remove from skillet and set aside. Reduce heat to low. Add rice vinegar, pepper, salt, sugar, olive oil and juice from the lemon. Whisk together and keep warm until ready to serve. Pour over salad mix
