2 SCALLIONS
ZEST OF 1 LEMON
1 TSP SALT
½ TSP PEPPER
HEAT OLIVE OIL IN A LARGE SKILLET. ADD ZUCCHINI AND LET IT GET SLIGHTLY BROWNED BEFORE STIRRING, ABOUT 6 MINUTES. TURN THE ZUCCHINI AND ADD SCALLIONS. SAUTÉ 3-4 MINUTES AND ADD REST OF INGREDIENTS. SERVE HOT.
