Lo Mein PDF Print E-mail


3 tbsp hoisen sauce
3tbsp dark soy sauce
1 tbsp hot sauce (or to taste)
1 pound lo mein noodles (can sub fetucchini)
4 to 6 tbsp canola oil
2 large eggs beaten
4 chicken tenders sliced thin ( can sub thin pork cutlets)
Salt & pepper to taste
3 garlic cloves finely minced
2 inch piece of fresh ginger grated (no substitutes)
6 scallions sliced on bias
2 ribs celery sliced on bias
1 can sliced water chestnuts draines
1 can bamboo shoots diced
1 cup shredded cabbage (can use slaw mix)  

Bring large pot of water to boil. Cook noodles to aldente.  Mix hoisen, soy and hot sauce  together in small bowl.  Season meat with salt & pepper.  Heat large skillet , add 3 tbsp oil, when hot, carefully add meat.  Stir fry 5 minutes or until no longer pink.  Remove meat from pan.  Add all vegetables  and garlic.  Stif fry 2 minutes, add back meat.  Make a well in cneter of food, add small amount of oil and beaten egg.  Scramble egg and when done mix with rest.  Add drained pasta and sauce to skillet.  Turn off heat and taste.  Adjust seasonings.
